📝 Ingredients (Makes about 12 cookies)
- 1 cup almond flour
- 1/2 cup oat flour (or blended oats)
- 1/4 cup natural peanut butter or almond butter
- 2–3 tablespoons honey or sugar-free sweetener
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
- Optional: 2 tablespoons dark chocolate chips (sugar-free if preferred)
👩🍳 Instructions
1️⃣ Preheat Oven
Preheat to 350°F (175°C). Line a baking tray with parchment paper.
2️⃣ Mix Wet Ingredients
In a bowl, mix nut butter, egg, honey (or sweetener), and vanilla until smooth.
3️⃣ Add Dry Ingredients
Stir in almond flour, oat flour, baking soda, and salt.
Fold in chocolate chips if using.
4️⃣ Shape & Bake
Scoop tablespoon-sized portions onto the tray.
Flatten slightly with a fork.
Bake for 8–10 minutes until lightly golden.
